At this trying times, when all you got is Ayuda, made a pansit out of it! Because why not?!

This is the nth day of the Enhanced Community Quarantine. I lost count and honestly I wouldn’t be aware of the date today if it’s not because of the Holy Week.

I have nothing much to share today but just the recipe I gave to a friend when I saw her post asking DSWD for the P5-8k financial assistance; “Kung napasama ko sa 5k-8k na yan eh di sana nakapag pansit ako para sa bday ko ngayon. Yung ipang papansit ko, pambayad ng Tax, mga =@&$vhs!”

Struggle is real for us, middle class. But what can we do? Crazy times, indeed! We can’t blame people from going ballistic over this financial assistance because no matter how small it is for some, it goes a long way to many. You know at times like this when everything is uncertain, it is very unfitting to judge people. Not even the most comforting words will be enough to help subside one’s fear, hunger, worries or even hatred brought about by the crisis and now this seemingly unfair distribution of help. The least we can do is to let people vent out. No matter how much we disagree or no matter how annoying their redundancy can get. I am not patronizing anyone but we are all victims here and we are vulnerable, aren’t we? There will come a point in time if this crisis continues, God forbids, each of us, rich or poor or people in between will all be twisting someone’s arm for our very own survival. Oh God!

Going back, I sent this recipe to the friend so she could have something for her birthday. She told me, her kids loved it and she didn’t believe it was possible to cook something new out of the relief goods she received. She then added, had she received the 5-8k assistance, she could have bought flour and butter and asked me for a cake recipe, too. Well, well, well… had I received mine too, I could have baked for her and send it as a bday gift. Haha!

PANSIT AYUDA RECIPE

You will need 2 Lucky me pancit canton, 2 canned sardines, garlic, onion, available veggies on your stash (carrots, sayote, kinchay, repolyo). I use snow peas, celery and petchay Baguio. Yan lang nasa fridge ko.
Bring water to a boil, cook the noodles for 2 minutes (do not overcook). Use a sieve or mesh strainer (salaan) to drain the noodles and then rinse it to wash away remaining wax. Drain again. Add the oil inside the package. Set aside.
Separate the fish from the sauce then sauté it with garlic and onions. If you have veggies that require minutes to cook like carrots and sayote, have it pre-cooked. Then add on the pan.

Stir fry the veggies and add the soy sauce inside the noodle pack. You won’t be needing the MSG powder, but you can keep it for future use. Add ground pepper.

Throw in the cooked noodles and sardines sauce and stir-fry for another minute over medium heat. Add salt to taste sprinkle chili oil or sesame oil.
Serve hot. And with chopsticks para kahit inisnab ka ng DSWD, sosyal pa din. Haha!
